Holy guacamole, Chipotle!

Shares in Chipotle Mexican Grill jumped 8.5 percent yesterday, to $408.97.

The Mexican dining chain said its revenue and net income rose as it opened more restaurants.

The burrito chain posted second-quarter profit that topped analysts’ estimates as an increase in traffic boosted sales.

The Denver-based company has recently started selling tofu and offering catering to maintain its sales growth, which is projected to slow to a 16 percent gain this year, from 20 percent in 2012.

Chipotle will expand its test of its tofu offering, Sofritas, to stores in the Pacific Northwest this month and potentially to other markets later this year.

The chain has about 1,500 restaurants.
