And now, breakfast.

“Cannibal Cop” Gilberto Valle’s family stayed up to all hours, celebrating his newly won freedom and toasting the “hero” judge who made it happen.

The disgraced former cop, released from jail on Tuesday, had lots of catching up to do with his mom and other loved ones at the family matriarch’s Middle Village, Queens, home.

“We stayed up talking ‘til 2 o’clock in the morning and I had the best night’s sleep that I had in over 20 months,” relieved mom Elizabeth Valle said Wednesday morning.

“Of course because I knew my son was innocent, it was just a matter of time and although we waited this long, it was well worth the wait.”

The mom called Manhattan federal Judge Paul Gardephe a “hero” for tossing her son’s conviction.

“Judge Gardephe is my hero because he upheld the law,” she said, raising her fists in the air.

“He’s [Valle] doing well, I’m going to make breakfast now. I brought some fresh rolls.”

Valle had been convicted of conspiracy to kidnap and torture women, based on his sick writings and email chats with other, like-minded pervs.

But Gardephe threw out the conviction, ruling that Valle was clearly writing fantasy and made no real-life plans to carry them out.

Valle’s writings were discovered by his wife, Kathleen, who called the FBI and launched the probe that eventually got him arrested and convicted.

Elizabeth Valle’s voice cracked with emotion on Wednesday morning when she saw a picture — in The Post — of her granddaughter, whom she hasn’t seen in months. The child is now living with Kathleen.

“It breaks my heart because I haven’t seen my granddaughter this whole time,” she said.

Mayor de Blasio also weighed in Wednesday, questioning the judge’s wisdom in overturning the jury verdict.

The mayor said he doesn’t ever want to see Valle back in uniform with the NYPD.

“I don’t think he should ever get his job back and I think it’s a troubling situation,” de Blasio said. “You know, I’m a little surprised by the court’s action. We’re obviously going to look very carefully at that situation.”

The NYPD wouldn’t comment, but PBA lawyer Stephen Worth said Valle can never be rehired because Gardephe upheld the ex-cop’s conviction for illegally accessing a federal database to get info on women the feds say he “targeted.”
