Matador charging into Miami Beach

Superstar French chef Jean-Georges Vongerichten is expanding in Miami with The Matador, an oceanfront supper club in Ian Schraeger’s new Miami Beach Edition Hotel and residences, Side Dish has learned.

Guests at the hotel at 2901 Collins Ave. — slated to open in 2014 — will also be able to order from Vongerichten. In addition, the room service perk will be offered to buyers of the 26 “limited-edition” condos designed by John Pawson and priced from $4 million to $18 million. The Edition — originally built in 1955 — sits on close to three beach-front acres. It is now a luxury Marriott boutique property.

Earlier this year, Vongerichten debuted J&G Grill, his first Miami eatery, at the new St. Regis Bal Harbour.

Drama continues at Le Bilboquet, which has been catering to Upper East Side francophiles for decades.

The bistro at 25 E. 63rd St. is supposed to clear out on Dec. 31 to make way for a new Roberto Cavalli store. But Bilboquet, which has been in the same spot since 1985, is hoping to keep the 37-seat restaurant in the same space — or at least buy time.

Owner Philippe Delgrange would like to stay indefinitely. Baring that, he hopes to stay put until he opens his new restaurant in five months.

“We are trying to stay open as long as we can,” Delgrange told Side Dish.

Delgrange hopes to stay open until he can relocate his staff to his new as-yet-unnamed restaurant on East 60th St. between Park and Madison avenues. That will be a much bigger space at around 2000 square feet.

“We have nothing to do with this issue. The dispute was between the landlord and the restaurant,” said Robert Donofrio, who heads Roberto Cavalli in North America.

David Rockwell will be designing Tao at the Maritime Hotel. The 22,000-square-foot restaurant and lounge at 363 W. 16th St. is almost double the size of the original Tao at 42 E. 58th St.
