An underhanded waiter at Todd English’s Olives restaurant was arrested for allegedly lining his apron with $91,000 worth of bogus gratuities swindled from the popular Union Square eatery, police sources said.

Mohammad Siraj, 31, was arrested Tuesday and charged with grand larceny. His alleged scam — which began in 2009 — involved adding extra tip money onto his checks in the restaurant’s computer, the sources said.

That inflated the size of his paychecks — which at Olives includes hourly pay plus tips — beyond what they should have been, the sources said. His allegedly pilfered profits came from the restaurant, not customers, said the source.

The Bronx man was caught when the restaurant’s bookkeeper noticed the “fraudulent charges . . . in the form of gratuities,” and called cops, according to the criminal complaint.
