Sleep with the fishes

Five-star dishes. Different exotic fishes. Room service. There will soon be a new Nobu for Kanye West to walk into with no shoes, and he can stay the night, too.

The world’s first Nobu Hotel, part of Caesars Palace in Las Vegas, will start taking reservations in October for its December opening. The elite boutique property, which just unveiled its David Rockwell design, will only have 181 rooms. But it will also be home to the world’s largest Nobu restaurant, a 327-seat, 12,775-square-foot colossus. And, of course, guests can also try out chef Nobu Matsuhisa’s first in-room dining menu (breakfast bento box, anyone?).

Matsuhisa, along with long-time partners Robert De Niro and Meir Teper, hosted a preview event at Nobu’s TriBeCa flagship on Sunday. Highlights from the room-service menu that we tried during the event included a green-tea waffle with braised short rib, quail egg and aged maple; a tonkatsu sandwich with prune sauce; and both red and white kimchi taquitos.

Nobu is the latest New York brand in Caesars’ restaurant collection, which already includes Rao’s, Mesa Grill, Old Homestead, Serendipity 3 and Payard. This is the first of six Nobu Hotels under development around the world, including one in Saudi Arabia that’s scheduled to open next year.
