Redbury heads to South Beach

A Redbury hotel will open in South Beach later this year, The Post has learned. Redbury South Beach, a conversion of the old Fairfax hotel on Collins Avenue, is the first hotel collaboration between Sam Nazarian’s SBE, Levy Restaurants founder and chairman Larry Levy and developer Bob Heyat.

Redbury South Beach, just down the block and across the street from Nazarian’s SLS South Beach, is the follow-up to SBE’s original Redbury, which opened in Hollywood in 2010.

Scheduled for completion by early fall, with a design that will merge South Beach’s Art Deco feel with the hotel’s Hollywood roots, Redbury South Beach will feature 69 rooms and suites and a 12,000-square-foot rooftop pool and event space.

Chef Tony Mantuano, whose four restaurants in Chicago include Spiaggia, has been tapped to run Lorenzo, the hotel’s lobby-level restaurant.
