Walking the walk: With all the chatter (pun intended) about new talk-show premieres — and how they performed — it’s worth noting that “The Talk” was up substantially in its third-season premiere on Monday.

According to metered-market overnights (data from 56 local markets), “The Talk” snared a 2.3 rating on Monday, which represents a 28 percent increase from last season’s premiere. That also matched its previous high in the metered markets.

Here in New York, “The Talk,” which airs 2 p.m. on Ch. 2, was up 50 percent over last season’s premiere, while, in Chicago, it clocked a whopping 108 percent increase over its 2011 season premiere. On the West Coast, Monday’s opener aired at 10 a.m., due to CBS’s coverage of the US Open Men’s Final (in Flushing). The show’s schedule was also affected in several Mountain Time Zone markets.

Julie Chen, Sharon Osbourne, Sheryl Underwood, Sara Gilbert and Aisha Tyler host.

Meanwhile, another daytime show with the multi-host format, ABC’s “The Chew,” has generated a new cookbook.

The Chew: Food. Life. Fun,” will be released Sept. 25 and features over 100 recipes, cooking tips and behind-the-scenes photos from the show, which airs 1 p.m. on Ch. 7 and is now in its second season.

There’s also “original commentary” from show hosts Mario Batali, Michael Symon, Carla Hall, Daphne Oz and Clinton Kelly.

And, speaking of “The Chew,” its New York City lead-in, “Who Wants to Be a Millionaire” (12:30/Ch. 7) is featuring “Celebrity Week” all next week, with Mo’Nique, Cheech Marin, Paula Deen, Jackee and Tony Dovolani raising money for The Alzheimer’s Association. Meredith Vieira hosts.

Country Music Award nominee Dierks Bentley will be in The Bronx this morning to surprise students at PS 103, The Hector Fontanez School, with a gift of Music Education as part of CMA’s partnership with Education Through Music (ETM) — and, to top it off, he’ll also perform for the kids. Tonight, Bentley performs at Joe’s Pub (425 Lafayette St.) as part of the CMA Songwriters Series. It’s already sold-out.

Ratings: NBC got off to a promising start Tuesday night with the official premiere of Matthew Perry’s new sitcom, “Go On,” which averaged 9.7 million viewers at 9 p.m. — NBC’s best comedy premiere in two years (in adults 18-49) and its top sitcom premiere (excluding previews) since “My Name Is Earl” in September 2005 (15.2 million). “Go On” had a sneak preview during NBC’s Summer Olympics coverage. Its lead-out, “The New Normal,” didn’t fare quite as well, averaging only 7 million viewers, but it did beat its timeslot competition in all key demos.

Over on FX, meanwhile, the 90-minute fifth-season premiere of “Sons of Anarchy” snared a series record 5.4 million viewers and 3.5 million adults 18-49.

According to FX, the episode is “likely” to be the most-watched single telecast in network history, once Live+7 data (DVR viewing over a seven-day period) is factored in. As it now stands, Charlie Sheen’s “Anger Management” holds that record (7.3 million viewers).

The previous “Sons of Anarchy” viewership record was 4.9 million for last season’s premiere.

* Ch. 4’s Darlene Rodriguez and “SNL’s” Kenan Thompson co-host tonight’s 4th Annual Christian Rivera Foundation Celebrity Gala to help raise money to find the cure for Pontine Glioma, the brain stem tumor that claimed the life of 4-year-old Christian Rivera. The event unfolds at The Copacabana (268 West 47th) . . . Monday’s episode of “Bad Girls Club” snared over 1.5 million viewers on Oxygen . . . A one-hour program featuring music for the Jewish New Year will air on WQXR (105.9 FM) this Sunday (5 p.m.) and Monday (9 p.m.) and on Tuesday, Sept. 25 (3 p.m.) . . . “Are We There Yet?” launches in syndication this Monday, Sept. 17. It’ll air here weekdays on Ch. 9 (at 10 a.m.). Terry Crews and Essence Atkins co-star. The series airs in first-run on TBS.
