Health food start up eyes $1B salad-dressings market

Skinny Eats, a New York start up that’s targeting 30-and-older women who want low-calorie condiments, has its eyes set on the $1 billion salad-dressings market.

Jimmy Lee, 39, the founder and chief executive, is an entrepreneur and venture capitalist who specializes in health care.

Skinny Eats is his first food-products company. He personally invested $100,000 and has raised $500,000 to launch the Manhattan-based startup.

His dressings, he says, reduce calories by 90 percent. The products recently launched in 185 metro-area Stop & Shop stores.

Lee said the plan is to expand to another 150 grocery stores, aiming for a target of $2 million to $3 million in revenues in the next 12 months, $4 million to $7 million by the end of 2014.

Lee’s old school chum, “Hunger Games” star Elizabeth Banks, is a fan.
